Now that socialising is back on the menu, baking is a less risky exercise – the danger of eating it all yourself is somewhat reduced when you’ve got people to share it with! This is one of our favourite recipes for the ultimate chewy chocolate cookies, using chocolate spread and white chocolate chips for extra decadence.
Ingredients
- 125g chocolate spread
- 125g unsalted butter
- 90g soft brown sugar
- 90g caster sugar
- 1 egg
- 2-3 drops vanilla essence or extract
- 200g flour
- 30g cocoa powder
- ½ tsp baking powder
- 150g white chocolate chips
Method
- Preheat the oven to 160 degrees (fan)
- Cream butter and sugar (both types) together
- Slowly beat in the egg, then the chocolate spread and vanilla
- Sieve the flour, cocoa powder and baking powder into a separate bowl and combine
- Add to the chocolate mix
- Bake for around 15mins
When you remove the cookies from the oven, they will seem undercooked, but they will harden as they cool and you’ll be left with a perfect chewy cookie! Find more recipes on the Mayfield retirement blog.
